Beef Noodle Soup

Soup, one of favorite dishes. I just love it so much that I could have it for breakfast.
Any soup would do but I really prefer the watery ones. I mean don’t get me wrong any soup is nice to me even the canned ones if I feel lazy. But really homemade soups are my favorite and so easy to make. On a rainy or cold day, while binging Netflix or just hungover, soup always makes me feel better. Vegetables, meaty or just a broth, you can have so many options when it comes to soup recipes.
Noodle soup is in my top five. I can have it with beef, chicken, eggs, dumplings, or pork, and the good thing about it is that you can have it with so many different vegetables. So here is the recipe for all the soup lovers!

Ingredients
  

  • 1 Liter Water
  • 2 Chicken Stocks (You can also use Beef
  • 1/2 pack Egg Noodles
  • 500 g Sliced Diced Beef
  • 1 Carrots Cut in thick Julienne
  • 3 Spring Onions Sliced
  • 3 Mushrooms Sliced
  • 1 Pak Choi
  • 1/2 Red Pepper Sliced
  • 2 tbsp Sesame Oil
  • 1 tbsp Olive Oil
  • 1 Bunch Coriander
  • 1 tbsp Soy Sauce
  • 1 Sparkle of Love

Instructions
 

  • Put the kettle on with 1L of water. Once the water is boiled you can prep the stock in a jug. I like to use Chicken stock for Beef noodle soup as the stock is clearer than the beef one, but it’s up to you if you want to use Beef stock.
  • Heat up a frying pan with 1 tbsp of olive oil, once hot add the beef. Add a drizzle of soy sauce while the beef is cooking, so no need to season it with salt. Cook for a few minutes (3-4 mins). When cooked, take the whole pan off the heat and set aside.
  • In a medium size sauce pan add a drizzle of sesame oil. Add the spring onions and stir for 2-3 minutes then add the stock. then add the carrots, mushrooms, peppers and Pak Choi. Let the vegetables cook for 2-3 mins. Add the Noodles and bring to boil for 2-3 mins. Once the Noodles done, takeoff the heat and serve hot. Sprinkle the coriander on top with a few chili flakes and add a few drops of lime juice to make it even tastier and "Bon Appetit "!
